 Christmas was A-mazing.  Simply put, it was the best Christmas I have ever had.  Originally I was thinking that I might be a little sad waking up anywhere else besides my parents home.  But waking up in our home and having our first Christmas here together was so special.  Tony and I both get SOOO into Christmas, it was just magical.  Full of joy, tears, love and pure joy. There's nothing better then snuggling up with the one you love on the couch listening to christmas music, enjoying the twinkling lights of the christmas tree and the sparks of the fireplace. Tony woke me up at 6:45 am, as excited as you would expect a little child to be. We got up and walked into the living room and BOY OH BOY did Santa come!!! All my favorites were under our tree- True Religion, Victoria Secret Pink and... a little blue box!!! I was BLOWN AWAY! Do I have the greatest most amazing husband ever or what?!  Santa also brought Tony a year long membership to 24 hour fitness!

After we had our first Christmas here at our place, we quickly got ready and headed over to the Ricker house to open presents there too.  It was awesome because even though Tony's siblings are grown up, they all ( except Stacy =(  ) came home early in the morning to open presents by the Christmas tree all together.  I can honestly say there is no better feeling then the love of family.  I feel so blessed to have them. I love them so much! And even though this was our first Christmas together and we couldn't really afford to buy everyone an amazing gift like we wanted, no one cared at the least.  No one cared because being with the ones you love on Christmas is an amazing gift in itself.  :)
  We definitely got hooked up with some cool presents at the Ricker home.. A new Ipod that is actually big enough to hold all Tony's music (160 g's!) a new home docking system for it, tons of spa stuff for me, and (this was awesome-) a "girls night gift basket! Complete with movie tickets, dinner gift cards, candy and lots of chocolate!  We got dinner gift cards, clothes, Cd's and all kinds of cool stuff.  The big present of the year went to Mom, who got... A BRAND NEW IPAD!   It was definitely magical over there I must say.  I really loved being over there for Christmas morning, with all the nieces and nephews running around playing with new toys Santa brought for them.  It will be so fun to experience Christmas in the future ( far future lol) with our own babies.  We are the only ones left with no children and I must say I think about it alot.  However, after a day spent with my adorable nieces and nephews I must say I do like coming home.. alone ;)
After the Ricker Christmas it was off to my parents house for a good ol' MacCallum Family Christmas.  One of the most looked forward to parts of the Christmas experience is our Christmas DVD.  Basically, instead of sending out Christmas letters, my family makes a DVD of all the past years pictures.  Birthdays, anniversary's, graduations, retirements, weddings, showers, and all the funny kodak moments in between.  Its becoming a family tradition and I feel excited every year to see the reactions on everyones faces.  It was awesome.  After thanksgiving dinner for the second time.. ( and at this point it was Tonys...6th plate?   ( love you honey!)  We fell asleep on the couch in our matching snuggies.  Yes we got matching snuggies.
 All in all it was the best Christmas I could have imagined. Im so lucky to have my best friend, and high school sweetheart to share the holidays with and can't wait for the years ahead of us.  I love him more than words can say.  I hope everyone had a magical Christmas and lets get ready for new years!!

All things merry

It has come to my attention lately how truly blessed we are for have been able to have a temple marriage.  I just feel so lucky to know that when life is tough, I have nothing to fear because the Lord is with us helping us, guiding us, comforting us and prompting us.  Marriage isn't all lovey dovey all the time,  at times it's a learning process and I feel happy to not only have Heavenly Father on our side but my best friend on my side. The world will throw you all kinds of lemons, most you would have never expected or planned for, and its going to take being united on as many levels as possible to get through it. Including your faith.  I truly grow to love my husband more and more each passing day. Love is a wonderful thing, and at this Christmas season, I feel very lucky to have it so abundant in my life.  Merry christmas everyone! We love you all!
On another note..
Tony went to the 49er game today ( GO NINERS!) So I went to singles with Natalie.  I MISS SINGLES SOOOOOOOOOO much. :(  I try veryveryvery hard to love my ward just as much but....=/  
It was so nice to see everyone and to feel the spirit that is always there.  After church I came home and had some presents to wrap and put under our tree!  So I turned on some of our favorite christmas tunes and started away.  It was so christmas-y in here with the tree and the lights.. but something was missing. And thats when I found this.

What a great idea for those who don't have a fireplace right?!  Our little home feels cozier already!

I also decided to make some Peppermint Bark today with was interesting.  One would think with all the baking I love to do I could handle the simple peppermint bark recipe right? Yea, I burnt the first batch. oops.
But the second batch came out great ;)
Hubby really liked it.
 One thing I love about Christmas..  getting Christmas cards in the mail!!!
It just gets me all excited about the holidays and knowing people thought of us makes me feel so loved. I am working on ours at the moment and they should be out by wednesday ( hopefully!)   Jacki actually took some AWESOME pictures of us this first year together.  She is so amazing.  If anyone is looking for a photographer.. Jacki is the woman!

Ya gotta love the holiday that is centered around eating, eating and MORE eating.  What are we excited for the most?  Tony says the stuffing. no doubt.  ..and the sweet potatoes..  Im excited for the dessert. MMmMmmMmm!!!! This is our first thanksgiving together! Although we have spent many thanksgivings with each other we have never been married.  I am very excited! We are starting the day at the Ricker home at about 10 am.  After we feast there, we will head over to my families thanksgiving dinner just in time for round two!  And I will be bringing our favorite- 
Chocolate satin pie!

So what are we thankful for??

" I am grateful for my wife [ aww shucks ;)  ] My mother and father, my Heavenly father, the Savior and his example in all things and who I can look up to when I don't feel adequate.  My sisters; who, next to my wife, are the only women in the world. My brothers; for their examples of how to be men.  The gift of music and how it affects me and my life and.. my good friends, you know who you are :)
I am grateful for my family as well. My mom who has become my closest friend. I am grateful for the good health of all those around me that I love.  I am grateful for my hubby.  He is the best! Im grateful for the opportunity I have to finish school at Sac State! Im grateful for beauty of this earth and the little things in life that bring me so much joy.  I am grateful for my Heavenly Father and the church. 
And! I am grateful for the best neighbors ever.. Caleb and Ben, who are always here to kill spiders  :)

I love pumpkin..

I LOVELOVELOVE this time of year!  Mostly because I love baking with pumpkin! Yummmeeeee :)  So here are a couple of my favorites this year  :)

Pumpkin Chocolate Chip Muffins

This is my favorite pumpkin cookie recipe given to me by my former roommate. So snacky!
Here's how to make them:

1 c. shortening
2 c. sugar
2 eggs
2 t. vanilla
1 15 oz. can pumpkin  (not pumpkin pie mix)
4 c. flour
1 1/2 t. baking soda
1 1/2 t. baking powder
1 t. salt
1 t. cinnamon
pinch nutmeg
1-2 c. chocolate chips
Cream shortening and sugar.  Add eggs and vanilla.  Add pumpkin.  Add dry ingredients.  Fold in chocolate chips.
Drop onto greased cookie sheets.  Bake 12 minutes at 375.  (Edges should just start to turn brown.)  Makes about 7 dozen.

(I cut the recipe in half)
Whole Wheat Pumpkin Muffins

1/2 cup chocolate chips or raisins 
  • 1 1/2 cups whole wheat flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon pumpkin pie spice
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1/2 cup chopped walnuts

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper liners. 
  2. In a large bowl, stir together the whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Make a well in the center, and put in eggs, pumpkin, oil and honey. Mix just until the dry ingredients are absorbed. Drain excess water from raisins, and stir in along with the walnuts. Spoon into muffin cups so they are about 2/3 full.
  3. Bake for 18 minutes in the preheated oven, or until the tops spring back when lightly touched. Cool in the pan before removing from cups.

YUM! A great breakfast :)

 Pumpkin Scones!

For the Scones:
2 cups all-purpose flour
7 Tablespoons granulated sugar
1 Tablespoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
6 Tablespoons cold butter
½ cup canned pumpkin
3 Tablespoons half-and-half
1 large egg
For the Powdered Sugar Glaze:
1 cup plus 1 Tablespoon powdered sugar
2 Tabelspoons milk
For the Spiced Glaze:
1 cup plus 3 Tablespoons powdered sugar
2 Tablespoons milk
¼ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch ground ginger
1 pinch ground cloves
1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper; set aside.
2. Combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves and ginger in a large bowl. Use a fork to cut the butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious; set aside.
3. In a separate bowl, whisk together the pumpkin, half-and-half and egg. Fold wet ingredients into dry ingredients, and form the dough into a ball. Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle about 3 times as long as wide. Use a large knife or a pizza cutter to slice the dough twice through the width, making three equal portions. Cut each of the portions in an X pattern (four pieces) so you end up with 12 triangular slices of dough. Place on prepared baking sheet. Bake for 14-16 minutes, or until light brown. Place on wire rack to cool.
4. To make the powdered sugar glaze, mix the powdered sugar and milk together until smooth. When scones are cool, use a brush to spread plain glaze over the top of each scone.
5. To make the spiced glaze, while the powdered sugar glaze is firming, combine all of the ingredients for the spiced glaze. Drizzle over each scone and allow the icing to dry before serving (about an hour).

And  Last but not least...

 Pumpkin Bread!
(aka Starbucks pumpkin bread)

  • 3 cups canned pumpkin puree
  • 1 1/2 cups vegetable oil
  • 4 cups white sugar
  • 6 eggs
  • 4 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1 1/2 teaspoons ground cloves

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

But seriously- Conference was awesome. The spirit in that conference center when President Monson first walks in.. unbelievable. We both learned tons!

Also... We got to go to Tony's mission reunion [Pittsburgh Pennsylvania Mission] It was sooo fun to finally put a personality with a face. I got to meet Boren, Hamilton, Smith, Zetner, Sister Campbell and her girls, and a few others! Those boys are crazy when they get together- I can only imagine what it must have been like on the mish...;)

I got to see Brianna, Collette and Hannah!! ( And their hubbies) I miss them soo much!  Brianna is having a baby and I pretty much am SO excited for her. Its so crazy how fast life goes.  It seems like just yesterday we were all roommates, Tony was on a mission,  and none of us were married.. and now look at us!

We got to do a session at the SLC temple, which is SOsosOSoSOSo pretty.. breath taking really. I love going to the temple it really allows you to count your blessings and see how fortunate we really are :)  Not to mention puts our lives into perspective- the Eternal perspective that is!

     Yesterday I was able to attend the Relief Society Dinner and Broadcast with Amy. It was SOOOOO great!! I felt my spiritual cup overflow as Julie B. Beck spoke.  President Monson was in rare form last night! I was laughing and crying and crying and laughing.. wow.  I feel so great. There are so many things I feel inspired to work on... I want to be my best self!
     On another note, I couldn't wait any longer to decorate the apartment for fall but this weather is ruining all my autumn excitement! I even bought pumpkins but its like a million degrees outside UGH.

     Even though the weather is anti-fall football season is still here!!! Poor hubby is oober depressed because our 9ers are like 0-3 or something.  He just mopes around after they loose.. its so sad. Last week we had everyone over to watch the game,( which was a GREAT game  even though we lost) .

     Oh! Last Tuesday we got to go to the temple! It was reaaaallllllyyy nice and I am making a mental note to get us there more often.  Today we went to baby Hyrum ( our new little nephew) 's baby blessing at the Alamo Chapel.  He is SO TINY!! :)  Anyway, a lady came up to us and was like " Were you guys at the Sac Temple on Tuesday?" We said yes and she was all " I recognised  your husbands hair!! Lol.

This week is going to be an especially busy week as we are getting ready to do a little traveling on Thursday. We are going to Utah for GC, Tony's mission reunion, to see family and to see my old roommates! I'm SO excited!! We leave Thursday morning at 6 am out of Sac airport and return Monday night.  I can't wait!!!!!  We probably won't write for a while, so until then, have a  super week everyone!!

Fall is almost here!

Tony and I  both LOVE the holiday season which is slowly  but surely approaching. Woo Hoo! I was at the dollar store the other day which already has not only Halloween and fall stuff but CHRISTMAS stuff too! YES!!!
So this week was a great week.   I am beginning to get used to and actually enjoy waking up at the crack of dawn (literally) for work every morning. The sun is just beginning to rise and it is such a beautiful sight.  Just a small reminder of the beauty of this earth and the blessings upon it.  We have so much to be grateful for and so much to look forward to!   Graduating college, careers, our first house, our first child, our first puppy, lol :) Last Tuesday hubby and I had the day off and went out on a date! We went to Old Sacramento and shopped around and went out to eat.  That place is so cool.  My mom and dad actually just went on an underground tour of Old Sac, which I heard was pretty interesting.  Maybe next time we'll have to do that!

Today was a perfect and (well needed might I add) lazy Sunday.  Hubby and I slept in ( YAY!) and basically vegged all day. Also- I just want to publicly announce that Tony makes the best homemade salsa I have ever had. Its just SO GOOD!!  Onions, cilantro, tomatoes, jalapenos, yuuuuuumyy! It's definitely his best talent. lol jk. 

Lazy Sunday!

Oh! Last night I got to babysit Lily and Berke! The two little girls I used to nanny for!  I was so excited all day to see them. I have missed them! I came home with lots of gift including a homemade pot holder for our kitchen and some beautiful artwork for our home. Thank you girls!

Well Its bed time for me- I have to wake up at 4:30 tomorrow morning!

School boy !

Hellooo! ToNy here ,
My wife really wants me to write in this thing.. lol -so here I am!  Life is dealing us some really good cards right now!  Heather just started working at Starbucks as of a week or so ago and she loves it! She looks soo cute in her lil' Starbucks outfit with her lil' green apron! I think sheeees Cuttteee! (as Rudolph would say) The only bummer thing is we don't get to see each other as much with our conflicting work schedules, but I guess thats married life at its finest right?   So last week was my first time back at school.. since highschool! yikes! Time flies.  I cant believe I've been out of highschool for 5 years already, it feels weird!  I was really nervous at first but actually it has been a lot of fun! I feel really good about myself  and am excited too continue my college journey slowly but surly!

 For those of you that are into SPORTS! Football SEASON starts soon! Preseason has already started and my 9ers are looking good lemme tell you! its gonna be a good season! Heather and I's footballs party's will be fun!So we have been married now for almost 3 months! Wow, doesn't really seem like along time Ha but at the same time it just feels like we have been married for ever! ;]  Love her!  I bought wife some flowers tonight ;]  Hopefully she Likes them!

I am working at Starbucks now and its looking like its going to be awesome! Hello early morning shifts at..5AM.. AHhh! But- the job is well worth it, there are a lot of perks and Starbucks is an awesome company! Everybody seems REALLY nice and it really does look like its going to be fun! So what else is new?

Well.. a couple days ago we celebrated good friend Seth's birthday at Amicis Pizza.. So good! I looovee getting together with all our friends like that! It's times like that when you can laugh with friends that you realize how truly blessed you (we) are. :)

Saturday night was a big night for Body Electric (Tony's band). They played with one of our favorite bands growing up The ataries! It was so fun to sing along with them. .... here in this diary... I write you visions of my summer... la la la :) Good times! Here's the video if you want to see it :) Thanks to Vinnie Langdon for creating this awesome video I can't wait to see it on the VinnieLangdon Show on the vacaville channel! I'm so proud of Tony!

Speaking of which, the new madden is out tonight at midnight so- of course hubby is meeting up with good pall Erick and waiting in line at Gamestop! So the girls are coming over for a little girl time. We're going to do facials! Thanks to Natalie and her super cosmetology skills! The girls+ movie+ treats+ facials = WAYFUNTIME!
