Spring break 2011

What a fun and well needed break!  One of my best friends, Natalie, left for France so the beginning of the week week was full of last minute preparations for her trip and a Farewell Party at her place.  I am so sad she is gone but so excited for her adventure. Maybe we can  manage a visit.. ( Please hubby?) lol.  The party was so fun! Its always fun getting together with all the girls and our friends.  We ( Natalie, Melanie, Ashlyn,Danielle and myself also had one last girls night! We went out to Woodstock Pizza in Davis (mmm) and then to a fabulous place for desert.  We had SUCH a great time!  Then we headed home for a girls night in with movies etc.   Here are a few pictures from the party etc.










After Natalie left, I flew to Missouri for my nieces wedding. ( Congratulations Anna and Mike!) I left at 3 AM for the airport ahhh. I packed plenty of sandals and a light jacket, but it was FREEZING! (Thanks Anna.) lol jk.  We stayed at the Hilton and I have to admit it was awesome. I'm not sure why I love staying in Hotels so much but I do!  We shopped, prepared for the wedding, went out to eat a bunch and enjoyed our families company.  The wedding was awesome, Anna looked Beautiful!  I hope was everything she had hoped for <3  Here are a few pics from MO.

2011 [so far]

Since I have a moment in between classes today I thought I'd take a moment to blog.  Life has been so hectic these past couple of weeks with school and midterms and life.  I am sooo looking forward to spring break next week! Not to mention I will be flying to MO to see my family for a few days! My niece Anna is having her wedding reception! SO EXCITED! 
     Well, Tony and I have decided not to move to Sacramento.  Not yet at least.  Maybe in the fall, but not today.  It's quite the shame since I found our perfect little home..but hubby put the big veto on the move so here we are. -.-
On another note, I LOVE school.  I know I complain sometimes about the classes I hate, but for the most part, Sac State is awesome.  I love the campus and I love my major! I am theroughly enjoying my time here.  I am learning to enjoy life wherever you may be on the path. Sometimes I get caught up in " After this, and during that"  I need to remember that

Yummy!

Lately I have found a few recipes that I have been loving!
 Whole Wheat waffles with light whip and fruit 




  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 tablespoons splenda (or regular white sugar)
  • 1 teaspoon salt
  • 2 cups fat free milk
  • 2 eggs
  • 2 tablespoons apple sauce

Mix them all together and bake them in the waffle iron!  Then top with light whip cream and  your favorite fruit :)


Black Bean and Cilantro salsa 






  • 1 (15 ounce) can yellow corn, drained
  • 1 (15 ounce) can white corn, drained
  • 1 (15 ounce) cans black beans, drained and rinsed
  • 1 (14.5 ounce) can Italian-style diced tomatoes, drained
  • 1 bunch finely chopped cilantro
  • 5 green onions, finely sliced
  • 1 small red onion, finely chopped
  • 1/4 cup lime juice
  • 1 avocado - peeled, pitted, and diced

Mix all together and enjoy with your favorite kind of chips. ( Try tostidos lime)
